Tuesday and Thursday night are my running nights, and on an evening like tonight with some surprise sunshine and clear sky it was beautiful. I always come home feeling fitter and hungry! But with not so much time to cook it has to be something quick and easy but at the same time as I’m feeling so good for exercising something healthy. Tonight it was a joint effort and we had Moroccan Chicken Tagine.

What makes life interesting is that everyone is different and this is certainly true when it comes down to food; enjoying very different tastes and flavours. The other day I got talking about some strange combinations, mainly for sandwiches, and straight away wanted to share and collect the craziest food combinations, so don’t be shy comment on this post and let me know yours!

lovely fried cabbage

I love cabbage… and one of my favourite ways to eat it, is to stir-fry, so I thought I would share this recipe:
What you need… bacon (although this is optional), cabbage (obviously), chinese five spice, sugar, ground nut oil.

I love tomatoes but I have a strange issue with the stalk - I just can’t eat it, to me it’s like the foreign bit in the tomato. I have to cut it out…
delicious roasted beetroot

A great thing about buying a veg box is that you get to try things you wouldn’t normally pick up in the shop. Then you have to work out how to cook it, for me this is the exciting bit and yesterday it was beetroot (again). We’re all used to having beetroot as a salad but I was sure you must be able to do something else with this vegetable.
I have tried a couple of things, cooking with pork and chicken and although nice I haven’t quite managed to fine-tune it. Last night I thought I’d try roasting it as other root vegetables roast just fine. And I have to tell you it tasted fabulous and the texture was beautiful, it crisped up perfectly around the edges, while locking in its flavour and complementing the other ingredients.
